Quick Recipe: Trout burgers
Makes 812oz trout fillet, skinned¼ pint cup milk¼ pint hot fish stock4 spring onions, thinly sliced12oz cooked potatoes, peeled 1 tsp tartare sauce1 egg, beaten2oz fresh white breadcrumbs4 tbsp semolina
Place the trout in a frying pan with the milk, stock and spring onions. Simmer for five minutes. Remove from the pan. Strain the stock through a sieve into a bowl, reserving the spring onions.
Mash the potatoes roughly and stir in the tartare sauce, egg and breadcrumbs. Flake the trout and add the reserved spring onions. Fold into the potato mixture and season with salt and pepper.

Hide AdDivide the potato mixture into eight and shape into burgers. Coat in the semolina and pat them into shape. Place in the refrigerator for an hour.
Heat the oil in a frying pan and fry the burgers for 10 minutes, turning once.
Serve in a bun with mayonnaise, diced red pepper, tomato and salad leaves.
